We are following the advice of the director of Aegean Cuisine who knows the best culinary addresses in the Med. He founded this organisation to promote the authentic cuisine and products in the Aegean region. One of those places is the family owned taverna Vilayet in the interior of the island of Ios. No fish on the menu, only meat. Rabbit, goat, lamb, lots of vegetables grown in this fertile area of Ios. The grandfather heats up the fire early in the morning and puts casserole dishes of goat and rabbit in the oven. Slow cooking for hours with simple ingredients and herbs.
