The local dish par excellence on Folegandros is matsata, which is a pasta, often made by hand and served with local ingredients. We try it in the Sunset Restaurant at the end of Ano Meria. It is a true family run restaurant where all the ingredients come from their own land. I go for the matsata with pigeon but you can also choose rabbit or rooster. Somebody told us that the owner used to hang a sing with “we slaughter our own animals” on his wall. Apparently a smart person told him this was a bit too explicit and now on the chalk board they only mention their food is “all local”….
