When we were in Lima for a culinary food feature about Peruvian potatoes, we asked the chefs at the famed Astrid Y Gastón to make us a potato dish that would wauw us and anybody else. The result was a big, boring disappointment. Nothing special, nothing new. My mother would be more inventive I think. But here in Copenhagen, at the 2-star Michelin Geranium, we are wauw’ed thanks to a small but ooh, so fantastic potato dish. We are talking about burned, charcoal black young potatoes. Small, pitch dark balls of delicate Danish spud. Serve this together with a spoon full of velvety sheep milk butter and you will get magic. It’s like a tango of fire and passion with pure, white innocence. Rasmus Kofoed is the man behind Geranium and the numerous delicate and deep flavour dishes we are tasting today. Rasmus is young and driven, won already 3 times the Bocuse d’Or in France and has gotten 2 Michelin stars in the last 2 years. Rumours say that he will win the third Michelin star soon, the first third star in Scandinavia.

In any case, we learned a lot during this long and intense lunch. For example the pearls of dill with salmon inside look damn sexy, onions go very well with chamomile and melted hay cheese, the Austrian wine from Martin & Anna Arndorfer, Von der Terrassen is amazing.
