Inunnguaq Hegelund stands in front of us smiling, with blushing cheeks, thanks to the great outdoors and spending a free day picking wild herbs, collecting berries and gathering mussels for his Greenlandic buffet the next day. Inunnquaq is the sous chef of the restaurant at the Hotel Arctic in Ilulissat. He is Greenlander and proud of his island. The potato project of chef inunnguaq and Jeppe Nielsen, the head chef of the hotel, is temporarily on hold. Next spring they will resume experimenting which crops grow well above the Arctic Circle. Chef Nielsen is Danish and is well known in Greenland. He was one of the first to introduce in this country where simple and straightforward food dominates, the more refined cuisine. Ulo restaurant and Hotel Arctic overlook a bay dotted with floating icebergs and during the season, in the summer, there is also a weekly BBQ outside on the terrace or a Greenlandic buffet (both for around 45 euros per person) when products like halibut sashimi, Greenlandic pink shrimp, musk ox steaks,â€¦ are served in royal portions. Hotel Arctic is without a doubt the most luxurious option to sleep in Ilullisat. Nearly all rooms look out over the water and for those wanting a more gimmicky stay, there are the igloos in steel almost tumbling into the ocean. At night, when the temperatures drop, the long polar winter is peeking around the corner and the bay starts to freeze over for the first time after the summer, there is nothing more cosy then sleeping in a comfy bed and enjoying a warm bath.
